Eggplant Rice Dressing

A new twist for your holdiay dressing--ground beef, rice, eggplant and chicken livers.
 

Ingredients

  • 1 lb ground beef
  • 2 cups cooked rice
  • 1/2 each cup onions, green onions bell peppers, and celery
  • 2 cups cooked eggplant
  • 1 lb raw chicken liver
  • 1/4 cup steak sauce

Method

Saute onions, green onions, bell peppers, and celery until tender. Add ground beef. Brown ground beef and drain. Run liver through food processor and add to ground beef. Cook on low until liver is cooked. Add steak sauce and eggplant. Simmer on low for twenty minutes. Add rice and mix thoroughly.
