
Cooked yams are mashed and seasoned with ginger, coriander, wasabi powder and lime juice.
Slice yams and place in saucepan. Fill with water to cover. Heat until water boils and cook yams in the boiling water until soft. Turn off heat. Drain off boiling water and rinse yams under cold water until you can handle them. Remove skin. Replace yams in saucepan and mash. Place ginger, coriander, wasabi powder, and salt in small bowl. Add the lime juice and make a paste. Stir paste into mashed yams and mix well. Spoon into serving bowl or onto plates. Garnish with lime slices.
Notes:
Good low-fat, low-sugar recipe for those with diabetes. Takes advantage of the yam's natural sweetness. Spices can be increased as desired.
