Curried Squash Soup

This vegetable recipe makes a great soup that is perfect in the cold weather.
Ingredients
- 3-4 yellow squash, diced
- 1 yellow onion, diced
- 2 cloves garlic, diced
- 2 tbsp olive oil
- 2 tbsp butter
- 3/4 cup flour
- 4 cups vegetable or chicken broth
- 1 pint maple or vanilla yogurt
- 1/2 pint cream
- 1 teaspoon curry
- 1/2 teaspoon ginger
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 2 tablespoons maple syrup

Method
Heat oil and butter in a large soup or lobster pot. Add onion and garlic. Sprinkle flour, a tablespoon at a time, until browned and stirred in. When all flour has been added, and a roux made, add broth then bring to boil. Add cream and squash then simmer until cooked. Add remaining seasonings and bring to boil. Simmer and season to taste. Blend to a smooth consistency and serve with warm bread.
