Crisp Sweet Veggie Relish

Serve this vegetable mixture as a side dish with turkey or ham. The sweet, tangy dressing goes well with the peas, beans, and sweet peppers.
 

Ingredients

  • 1 10-oz. pkg. frozen green peas, thawed
  • 1 10-oz. pkg. frozen French-cut green beans, microwave cooked 8 minutes
  • 1 10-oz. pkg. frozen white shoe peg corn, thawed, or 15-oz. can, drained
  • 1 15-oz. can black beans, rinsed and drained
  • 1 large green sweet pepper, diced
  • 1 large red sweet pepper, diced
  • 1 cup diced celery
  • 1 cup diced mild white onion
  • Dressing:
  • 1/2 cup oil
  • 3/4 cup vinegar
  • 1 cup sugar
  • 1 tsp. salt
  • 1 tsp cracked pepper
  • 1 tablespoon water

Method

In a large bowl, combine vegetables. Combine dressing ingredients in a saucepan and heat until boiling, stirring to dissolve sugar. Pour over veggies, mix, cover, and chill overnight. Keeps well

 

Notes: My favorite do-ahead side dish/salad for Thanksgiving and other holiday dinners.
