Cornbread Pudding

This rich vegetable dish combines corn--whole kernel and cream-style--with corn muffin mix, plus an egg, sour cream and melted butter.
Ingredients
- 1 Egg, beaten
- 1, 14 oz. Can Cream-Style Corn
- 1, 15 oz. Can Whole Kernel Corn (drained)
- 1 8 oz. container Sour Cream
- 1 Stick Butter (melted)
- 1 Box Jiffy Corn Muffin Mix

Method
Preheat oven to 350 degrees. Stir together wet ingredients in a medium bowl. Add muffin mix and stir until blended. Batter will be lumpy. Pour into a 9x9" greased baking pan. Bake about 45 minutes. Top will be slightly golden.
