Company Sweet Potatoes

Baked sweet potato casserole with a topping of coconut, chopped nuts, and brown sugar; a great Thanksgiving dish.
 

Ingredients

  • 3c. mashed sweet potatoes
  • 1/2c. sugar
  • 1/2c. milk
  • 1/3c. butter
  • 2 eggs
  • 1 tsp. vanilla flavoring
  • Topping:
  • 1c. coconut
  • 1c. chopped nuts
  • 1c. brown sugar
  • 1/3c. all purpose flour
  • 1/3c. butter, melted

Method

Blend coconut, nuts, brown sugar, & flour; then add melted butter. Sprinkle over potatoes. Bake at 375 degrees until brown, about 25 minutes.
