Classic Corn Muffin Stuffing

Basic corn muffin mix is the base for this essential side dish. The addition of onion, celery, mushrooms and hard boiled eggs bring this dish together.
Ingredients
- 3 boxes corn muffin mix
- 2 hardboiled eggs
- 2 raw eggs
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 16 oz fresh mushrooms
- 12 oz canned mushrooms
- 1 can cream of mushroom soup
- 2 cans chicken broth

Method
Prepare muffins according to instructions, cool, then break into pieces. Mix together remaining ingredients and bake at 400 degrees for 45 minutes.
