Chunky Cinnamon Cranapple Cake

A mix of apples and cranberries add flavor and a splash of color to this moist, flaky cake.
 

Ingredients

  • 5-6 tart red apples, peeled and cut into chunks
  • 1 1/2 tbsp ground cinnamon
  • 1 tsp freshly ground nutmeg
  • 1/4 tsp ground cloves
  • 5 tbsp sugar
  • 1/2 cup dried cranberries
  • 2 3/4 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup orange juice
  • 1 tsp pure vanilla extract
  • 1/2 cup vegetable shortening
  • 1 3/4 cups sugar
  • 3 eggs
  • 1 cup sour cream

Method

Preheat oven to 350 degrees. Grease and flour a tube pan. Place apples in a bowl and toss with spices and sugar, then set aside. In a small bowl, place dried cranberries then cover with very hot, but not boiling, water and set aside. In a bowl, whisk together flour, baking powder and salt then set aside. In a large mixing bowl, on medium high speed, cream shortening and sugar until fluffy. Add eggs, one at a time, mixing well after each. Add orange juice and vanilla. Or add flour by thirds, with sour cream, ending with flour. Mix only until just incorporated, but do not overmix. Drain water from cranberries and mix with chopped apples. Pour half of batter into prepared pan. Spread half of apple and cranberry mixture over top. Pour in second half of batter and arrange remaining apples and cranberry mixture on top. Bake about 90 minutes, or until a tester comes out clean. Remove from oven and let sit in pan 15 minutes before removing.
