Brandied Yams

Healthy yams, baked in a sauce with orange juice, brandy, orange rind and brown sugar.
 

Ingredients

  • 6 medium size yams, cooked, peeled and cut into serving sized portions.
  • 1/2 cup orange juice
  • 1/2 cup brandy
  • 2 tsp grated orange rind
  • 1 Tbsp cornstarch
  • 1/4 tsp salt
  • 3 Tbsp melted butter
  • 1/3 cup firmly packed brown sugar
  • 1/3 cup sugar
 
Method

Place yams in greased 2 quart baking dish. Combine remaining ingredients into a heavy duty sauce pot and cook, stirring constantly, until thickened. Pour sauce over yams and bake at 350 degrees for 30 minutes. 6 servings.

 

Notes: This is a very easy and delicious yam dish. It's always a winner at the potluck suppers.
