|1 cup||Unsalted Butter, softened|
|⅔ cup||Minced Fresh Basil|
|2||Garlic Cloves, minced|
|2 tsp||Lemon Juice|
In a small bowl, combine all ingredients until well blended. Transfer to individual sheets of plastic wrap, roll into two 1-inch diameter logs. Refrigerate until firm, or freeze for later use.
Recipe can be cut in half or doubled. During the summer we have a bountiful supply of fresh basil. I make up several batches of this basil flavored butter and freeze it. At Thanksgiving, I soften it and place pats of basil butter under the skin of the breast, and then rub it over the entire turkey skin. The turkey always turns out moist, brown and subtley flavored.
