Bakery Shop Apple Cake

A decorative display of baked apples top this moist and tender cake. Bake in a springform pan.
Ingredients
- 3-4 medium apples
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 2 cups all purpose flour
- 1-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter at room temperature
- 1 cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup apple jelly, melted
- 2 tablespoons sliced toasted almonds

Preheat oven to 350 degrees. Pare apples, cut each into 6 wedges, and remove cores. Place wedges in a large bowl and toss with sugar and cinnamon. Grease a 9 inch springform pan and set both aside. In a small bowl, stir together flour, baking powder and salt then set aside. In a large bowl of electric mixer, place butter, sugar, eggs and vanilla. Beat on high speed, scraping often, 3-5 minutes or until very light and fluffy. Stir in half of the flour mixture until just blended. Blend in sour cream. Add remaining flour mixture and beat until batter is smooth. Pour into prepared springform pan. Arrange coated apple wedges on top in a circular manner, pushing pieces slightly into batter. Bake 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. Cool cake in pan on a wire rack for 10 minutes. Run a knife around edges of cake, then carefully release spring and lift off pan. Brush top of cake with warm melted apple jelly then sprinkle with almonds. Serve cake warm or cooled.
Notes: I gave the cake this title because it's so beautiful, it looks like a pastry chef made it at a fancy bakery, but for a fraction of the cost. When apples are at their peak, you will love serving this fancy dessert to your family or guests.
