Baked Kale Jarlsberg

Kale is cooked, drained and combined with a thick white sauce that contains Jarlsberg cheese and a little nutmeg.
 

Ingredients

  • 2 1/2 pounds fresh kale, washed several times under cold running water
  • 3 Tbsp butter
  • 3 Tbsp flour
  • 1 cup milk, scaled
  • 1/2 cup grated Jarlsberg Cheese
  • 1/4 tsp salt
  • 1/4 ground black pepper
  • 1/4 tsp ground nutmeg
  • Dash of hot pepper sauce
  • 1/2 cup soft bread crumbs
 
Method

Preheat oven to 425 degrees. Discard any faded or yellowing leaves and the center ribs from well-washed kale. Steam, covered, for 15 minutes, or until tender. Cool and press out liquid from kale. Chop kale finely. Melt butter in a heavy saucepan over low heat; whisk in flour. Cook and stir 2 minutes. Whisk in milk. Add half of the cheese and the salt, pepper, nutmeg and hot pepper sauce. Cook, stirring constantly, until thick and bubbly. Add chopped kale. Transfer mixture to a buttered baking dish; sprinkle with a mixture of the bread crumbs and remaining cheese. Bake until golden brown and bubbly, 15 to 20 minutes.

 

Notes: This is an extra-special side dish for Southern Thanksgiving celebrations. Good old-fashioned soul food.
