Baked Acorn Squash Filled with Mincemeat Stuffi

No one will guess how easy this is to make--just add a few ingredients to a box of purchased stuffing and bake in squash shells.
 

Ingredients

  • 4 small acorn squash
  • Salt and pepper
  • 8 ounce package poultry stuffing mix, prepared according to package directions
  • 1/2 cup butter
  • 1/2 cup minced yellow onion
  • 1/2 cup minced celery
  • 1 cup prepared mincemeat
  • 8 pats of butter

Method

Preheat oven to 400 degrees F. Wash, halve and clean acorn squash. Season with salt and pepper. Spray a large shallow baking pan with cooking spray and place the squash, cut sides down, into the dish. Bake in preheated oven approximately 30 minutes. Meanwhile, prepare packaged stuffing according to directions and in another pan saute onions and celery in 1/2 cup butter until pale golden. To the prepared hot poultry stuffing, add the sauted onions and celery and prepared mincemeat and thoroughly mix together. Remove cooked squash from oven, turn the squash halves to cut side up and spoon prepared stuffing mixture into squash cavities. Return to oven and bake until lightly crisped. Place on a serving platter and drive a pat of butter into the center of each squash.

 

Notes: Use either prepared store bought fruited mincemeat or homemade venison mincemeat in this delicious stuffed squash. This easily passes for a main dish.
