Apricot-Onion Salad with Raspberry-Parmesan Dressing

This colorful salad combines greens with red onion, carrot, apple, nuts, Swiss cheese and dried apricots, tossed with raspberry vinaigrette, Parmesan and sesame seeds.
 

Ingredients

  • 3 cups shredded iceberg lettuce
  • 2 cups shredded baby spinach
  • 1 cup chopped red onion
  • 2/3 cup diced dried apricot
  • 2/3 cup shredded carrot
  • 2/3 cup diced (Washington) apple
  • 1/2 cup chopped walnuts
  • 1/2 cup finely shredded Swiss cheese
  • 1 cup raspberry vinaigrette salad dressing
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp toasted sesame seeds
 
Method

Combine ingredients in a large mixing bowl; gently toss to mix, then serve. If preparing the salad ahead of time, wait until just before serving to add the last three ingredients to the salad mixture. This will help prevent the salad from getting soggy.

 

Notes: If you want to add a fancy touch to the salad's presentation, use 5 thin slices of fresh apricot to create a flower shape in the middle of the salad. Sprinkle lightly with sesame seeds and place a fresh raspberry in the middle. This is one of my favorite potluck dishes because it's so very easy and yet so very good. It takes me only ten minutes to make it from start to finish and I receive compliments whenever I bring it.
