Apple-Filled Sweet Potatoes


Mashed canned sweet potatoes are combined with butter, eggs, & brown sugar, formed into mounds, and topped with a sweetened apple mixture.



Ingredients:

  • 2, 16 oz cans sweet potatoes (yams), drained
  • 2 eggs
  • 1/4 cup butter, melted
  • 2 Tbsp brown sugar
  • 1 tsp vanilla
  • 1/2 tsp ground nutmeg
  • 6 medium apples, peeled & chopped
  • 1/2 cup water
  • 1 cup sugar
  • Ground cinnamon

Method

In a large mixing bowl with mixer at low speed beat together the first six ingredients until combined. Increase speed to medium and beat until light and fluffy. Using a large ice cream scoop, spoon mounds of mixture onto a cookie sheet (lightly greased or non-stick) to make about 8 mounds. Make a "well" or depression in center of each mound with back of a spoon. In saucepan over medium heat, bring apples and water to boiling. Reduce heat to low, cover and simmer 10 min until apples are fork tender. Stir in sugar. With a slotted spoon transfer apples into the well; sprinkle with cinnamon. Bake at 400 degrees 25-30 mins until golden brown. Cool for a minute on the cookie sheet before removing.

Notes: Great to make ahead and re-heat; very pretty on plate.
